Vegetable Soup

Brrr- it's cold out there! But no worries- my recipe for Vegetable Soup is sure to warm you from the inside out. A staple in my home & something we have in our fridge on rotation all winter long!
This is a crowd pleaser- I guarantee you & whoever you cook it up for will love it. Plus, it's the perfect soup for making you feel better if you're a little under the weather..it's filled with hearty & super healthy veggies. Also- my fave part of this recipe is I mostly use veggies I already have in the fridge, so often certain items get swapped if I have something else on hand! Feel free to use any veggies you may already have at home.
VEGETABLE SOUP
INGREDIENTS
Serves 4-6
2 tablespoons extra-virgin olive oil
4 cups (1L) Low Sodium Vegetable Broth (I use Pacific Organic brand)
1 cup of frozen spinach, or frozen kale
1 cup celery, diced
1 cup carrot, diced
1 cup zucchini, diced
1 cup onions, diced
½ cup parsley
2 bay leaves
Salt & Pepper
TO GARNISH:
Parmesan cheese, grated
INSTRUCTIONS
1. Heat the olive oil in a large pot over medium-high heat. Add the onion and let them sweat with the lid on,about 4 minutes. Add the celery and carrot and cook with the cover on until they begin to soften, about 5 minutes. Add zucchini, let cook another 2 minutes. Then add all the vegetable broth and let boil. Once it’s boiling, add frozen spinach or kale & HALF the parsley.
2. Reduce the heat to medium low and simmer 10 minutes.
3. Season with salt to taste and garnish with remaining fresh parsley.
4. Serve with baguette & optionally grated parmesan.
