Watermelon Lemonade
We are celebrating my oldest birthday, and she requested I mix up some watermelon lemonade for her party. Besides it being a party favourite, my kids loved sipping on this delicious beverage all summer and it quickly became a staple in our family. It’s refreshing, different and healthy (according to my kids) LOL. There is also a grown ups only version of this for happy hour!
Ingredients:
6 cups chopped seedless watermelon
1/2 cup freshly squeezed lime juice (about 4 limes) or lemons
plus 4 lemons, thinly sliced crosswise, for garnish
2 tablespoons sugar (add 2 more tablespoons if needed)
Mint leaves to decorate
Directions:
Working in batches, puree the watermelon in a blender with the lime juice and sugar until smooth. Add more sugar, if needed. Transfer puree to a pitcher. Cover and chill until ready to serve. When ready, add ice cubes to fill and garnish with lemon slices and mint. Stir and serve.
Spiking this sipper with vodka makes a snappy cocktail for summer, so add 1/2 cup of vodka or limoncello and let the good times roll!! Enjoy !
