Coloured Beet Salad With Pistachios
This beet salad with pistachios is a simple way to bring colour, flavour, and nutrients to your table. This recipe couldn’t be easier and it’s sure to please everyone at the table! My family loves it!
Coloured Beet Salad With Pistachios
INGREDIENTS
4 steamed medium beets (any color),unpeeled, leafy stems removed
3 tablespoons extra-virgin olive oil, plus more for drizzling
Kosher salt and freshly ground black pepper to taste
¼ cup roughly chopped fresh parsley, plus more for serving
1 tablespoons roasted, salted crushed pistachios,
1 tablespoons roasted, pine nuts
Drizzle with White balsamic glaze
Optional:
¼ cup roughly chopped fresh chives, plus more for serving
INSTRUCTIONS:
Step 1
Slice the beets into small chunks and toss them in a bowl with the olive oil, salt, and pepper.
Step 2
Add the parsley, crushed pistachios and roasted pine nuts.
Step 3
Drizzle the white balsamic glaze on top
