Healthy Raspberry Chia Jam

I’m all about delicious things when it comes to food, and who isn’t right?! But often, that means lots of sugar & ingredients that may taste good.. But aren’t so good for you. That’s not the case when it comes to this incredible Healthy Raspberry Chia Jam!
The Chia is what bulks up your jam, not tons of added & refined sugars. This is a healthy, low-sugar alternative to a regular jam & only takes 10 min to make- try it out!

HEALTHY RASPBERRY CHIA JAM

INGREDIENT BREAKDOWN:

  • Chia seeds: thicken the jam…not tons of added sugar! Traditional jams contain an insane amount of sugar, but like I said- not chia jam! These little powerful seeds help prevent blood sugar spikes, are full of fibre, omega-3 fatty acids, calcium & have tons of protein in them.

  • Raspberries: You can use fresh or frozen fruit. Perfect for leftover fresh fruit in the summertime when it’s in season and also a great way to use up any fruit you may have in your freezer!

  • NOTE: *This recipe works with nearly any juicy fruit. Strawberries, raspberries, blueberries, blackberries, cherries, peaches, apricots.. Take your pick!

INGREDIENTS:

  • 2 cups fresh or frozen fruit raspberries 

  • 2 tablespoons chia seeds

  • 1/2 tablespoon freshly-squeezed lemon juice

  • 1–2 tablespoons honey or maple syrup*

  • 1/2 teaspoon vanilla extract 

OPTIONAL:

  • A dash of spices like cinnamon, nutmeg or ginger.

  • 1/2 teaspoon lemon zest for an added zing!*


*Note: you can add or remove these ingredients, and scale the quantities you'd like of them based on how naturally-sweet your fruit is. 

INSTRUCTIONS:

1. Heat fruit in a small saucepan over medium-high heat, stirring occasionally, until the fruit is heated through and begins to break down and bubble.  Use a spoon or potato masher to mash the fruit to your desired consistency.

2.  Stir in the chia seeds and lemon juice until combined.  Then taste, and stir in 1 or 2 tablespoons sweetener if needed.

3.  Remove from heat and let cool for 5 minutes.  (The jam will thicken considerably as it cools.)

4. Give the jam one final good stir.  Then serve immediately, or transfer to a sealed container and refrigerate.

STORAGE:
Store your jam in a sealed container in the fridge for up to 1 week, or freeze for up to 3 months.
