Zucchini & Mushroom Tarte Tatin

This recipe is a simple dish that can be prepped quickly- in under 30 min actually! It requires hardly any ingredients- and it’s ideal for a quick lunch or brunch, and goes great with salads, too.
It’s light & fresh, well balanced and tastes fab!

ZUCCHINI & MUSHROOM TARTE TATIN

INGREDIENTS

  • 1 sheet puff pastry (rectangular)*

  • 1 medium zucchini (about 8 ounces), thinly sliced lengthwise

  • 500 grams (1 box) mushrooms, thinly sliced 

  • Coarse salt and freshly ground pepper 

  • Honey

  • Roasted pine nuts

*Store bought is fine- use one from your local bakery! 

Optional to garnish:

  • Smoked salmon

  • Burattina or goat cheese

  • Dill

  • Chives

  • Spicy chili oil or pesto

INSTRUCTIONS

  1. Preheat oven to 425 degrees.

  2. Grill zucchini in olive oil, salt and pepper & set aside to reserve. Then, grill your mushrooms in the same pan (separately from the zucchini) and set aside.

  3. Place parchment paper on your cooking tray and then drizzle honey onto the paper. Spread out handful of pine nuts

  4. Next, layer on your zucchini & then your mushrooms. 

  5. Place the dough on top. 

  6. Cook for 20-22 minutes. 

  7. Let cool for 10 minutes before serving, then flip your Tarte Tatin right side up. 

  8. To garnish, add the smoked salmon, dill, burrattina, chives & spicy chili oil.
