Gluten Free Banana Pancakes

I must say.. there’s nothing like quite pancakes for breakfast! No matter how old you are, having pancakes for breaky is always such a treat. But, being health conscious is something I’ve prioritized more and more in my adult years, and some typical pancake recipes don’t exactly fit into that mold if ya know what I mean!

That said, these Gluten Free Banana Pancakes are the perfect solution! These deliciously fluffy, healthy pancakes are also made right in your blender. Could not be any easier!

There’s no flour, no butter, or any kind of sugar added. Which means these pancakes are made for literally anyone- kids included, of course. My kids love this recipe and I am sure yours will, too.

INGREDIENTS

  • 2 medium ripe bananas (the riper, the better!)

  • 2 eggs

  • 1/2 cup unsweetened coconut milk (or any non-dairy milk)

  • 1 tablespoon vanilla extract (Ideally Madagascar vanilla extract)

  • 1 ½ cups gluten free old fashioned rolled oats

  • 2 teaspoons baking powder

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg

  • A pinch of salt

  • Coconut oil, for cooking (can be substituted with Olive Oil)

Topping option ideas:

  • Fruits (fresh or pureed)

  • Nuts & Seeds

INSTRUCTIONS

  1. Using a blender, mix ALL ingredients until completely smooth.

  2. In a crepe pan (any medium frying pan can do) warm the coconut oil over medium heat. Wait for the pan to get hot then add 1/3 cup of the batter (for smaller pancakes add 1/4 cup) for each pancake. You can cook multiple pancakes at a time depending on the size of your pan. Cook the pancakes until you see a few bubbles on the top.

  3. Flip the pancakes until nicely brown on both sides and evenly cooked. If the pancakes seem to be browning too quickly, turn the heat down and let it cook through. Repeat the process and serve with your favorite garnishes.
