My Banana Bread

Banana bread is a staple in most homes, am I right? But each family has their own banana bread recipe they swear by and this one is my signature loaf. It’s halfway between a bread and a cake because it tastes so darn sweet and delicious.

I like to make my banana bread fancy by decorating the top with a banana cut into thin slices and placed on top before baking. Dipped in brown sugar, it brings the bread to another level as caramelizes while baking. I promise I get a lot of oohs and aahs each time I serve it. I love sharing my family faves and this one is not only a fave, but a weekly must! Enjoy!

My Banana Bread

INGREDIENTS

  • 3 bananas, very ripe

  • 1 stick butter, softened (and extra to grease the pan)

  • 3/4 cup dark brown sugar

  • 1 tsp vanilla extract

  • 2 eggs

  • 2 cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/4 tsp salt

  • pinch of nutmeg

  • 1 tsp cinnamon

BROWN-SUGAR BANANA GARNISH

  • 1 banana

  • 3-4 tbsp of brown sugar

NOTES:

*If you’d like your banana bread to be even more moist, you can add in 2 tbsp of plain yogurt or sour cream.

Optional add-ins:

1/2 cup of roasted walnut or pecan

Or/and

1/2 cup of semi-sweet chocolate chips

INSTRUCTIONS

  1. Preheat oven to 350F and grease a loaf pan with softened butter.


  2. For the banana bread:

  3. In a bowl, mash bananas - don’t worry if there are lumps, it adds texture and a pop of taste!

  4. In another bowl (or stand mixer), cream the butter, then add the brown sugar and mix on high until well combined and lighter in color, about 3 minutes.

  5. Add in your mashed bananas.

  6. Once combined, add vanilla extract and eggs, and mix very well.

  7. Add in flour, baking soda, baking powder, salt, nutmeg and cinnamon. 

  8. Then, fold in your chocolate chips or nuts of choice. Do not over-mix!

  9. Set aside

For Brown Sugar Garnish:

  1. Pour out 3-4 tbsp of brown sugar on a flat plate

  2. Cut banana straight down the middle

  3. Coat both sides of the banana in the brown sugar so that it caramelizes nicely when banana bread is in the oven baking

* TIP: lay the slices on the top toward the edges, if they're in the center your slices may sink.

ASSEMBLE

  1. Pour all of your banana bread batter into your greased loaf pan

  2. Add your brown sugar-coated banana to the top of the cake. Lay the slices in opposite directions directly on the top of your banana bread

  3. Bake for 50-60 minutes

One more thing before you go! I find banana bread to be one of the trickier desserts to keep fresh. If it’s kept in a warm place, it can ferment, and trust me, no one wants hard, fermented banana bread. I wrap my banana bread so it doesn’t dry out in an airtight container. This helps to keep it at room temperature for up to 3-4 days. Another option is to freeze slices, that’ll make it last for up to 6 weeks.
