Gluten and Dairy Free Chocolate Cake

I'd love to claim that I whipped up this moist chocolate cake from scratch, but truth be told, the box mix I use is just unbeatable. Despite my attempts to create it from the ground up, the convenience and taste of this mix are hard to top. 

This chocolate cake strikes the perfect balance - decadent without being overly rich, and I can't get enough of it! Whenever I'm playing host, it's my go-to. Plus, when I use my fancy cake pan (also an Amazon find!), it looks like a professionally made cake, even though anyone can nail it!

INGREDIENTS 

Chocolate Cake 

Chocolate Ganache 

  • 1/2 cup of almond milk 

  • 1 cup of semi-sweet chocolate chips


NOTES

*Milk can be replaced with dairy milk or any other non-dairy alternative of your choice

**you can replace with vegetable oil 

INSTRUCTIONS 

Chocolate Cake

  1. Heat oven to 350°F. Grease the bottom and sides of two 8* or 9" round cake pans.

  2. In a large bowl, beat cake mix, milk, oil and eggs. until thoroughly combined. Gently mix in boiling water, until smooth. Batter will be thin. Pour into pans.

  3. Bake for 25-30 min.*, or until the toothpick inserted into the centre comes out clean. Cool for 10 minutes in a pan then cool completely on a wire rack before frosting.

Chocolate Ganache

  1. Heat the almond milk in a small saucepan over medium heat until it begins to gently simmer. (Do not let it come to a rapid boil—that’s too hot!) 

  2. Pour over the chocolate chips then let it sit for 1-2 minutes to gently soften the chocolate.

  3. With a metal spoon or small rubber spatula, very slowly stir until completely combined and chocolate has melted.

Bake time based on cooking dish: 

  • Cupcake pan: 16-20 mins 

  • Mini cupcake pan: 10-12 mins 

  • 9” x 13” pan: 25-35 mins 

*TIP: To avoid your cake from crumbling when you remove it from the pan, before baking, mix equal parts cocoa powder and sugar in a small bowl. Give your cake mould a quick spritz with coconut oil spray (do it over the sink to avoid a mess!), then coat the pan evenly in the dry mixture by swirling the mixture around in the pan. Works every time!
