Jules’ Favourite Summer Salad Dressings

All summer I’ve been playing around and fine-tuning my two fave dressings. So simple yet delicious, these dressings have become our go-to companions for countless meals! 

Green Goddess Dressing 

My Green Goddess Dressing is a game-changer that never fails to intrigue everyone at the table whenever I bring it out. This dressing is my secret weapon; a blend of flavours that's as versatile as it is delectable. Drizzle it over a bed of crisp romaine, fresh dill, and chopped walnuts, then season with a touch of salt and pepper – you've got a winning combination! From simple salads to more elaborate recipes, this dressing effortlessly elevates any dish it graces.

INGREDIENTS

  • 1/2 cup plus 3 tablespoons of extra virgin olive oil 

  • Juice of 1 Lemon 

  • 2 tablespoons tahini

  • 2 teaspoons Dijon Mustard

  • 1 garlic clove grated

  • Kosher salt and freshly ground pepper to taste

INSTRUCTIONS

  1. In a large bowl, whisk together ½ cup of olive oil plus the lemon juice, tahini, mustard, garlic and 2 tbsp of water until smooth

  2. Add the salt, pepper and red pepper flakes, et voila! 

Lemon Sumac Dressing

Elevate your salads with a burst of zesty flavor from our Lemon Sumac Dressing. Just a few simple ingredients come together to create a tangy and versatile dressing that brightens up any dish. With the vibrant notes of lemon zest and the unique touch of sumac, this dressing adds a delightful twist to your greens. Follow the easy instructions to whisk up this dressing in no time, and keep it on hand to elevate your meals throughout the week! 

INGREDIENTS: 

  • Grated zest and juice of 1 lemon (about 3 Tbsp)

  • 3 Tbsp extra-virgin olive oil

  • 1 tsp grainy Dijon

  • 1 tsp honey

  • 2 Tbsp sumac

  • ¼ tsp kosher salt

  • Freshly ground black pepper

INSTRUCTIONS:

  1. In a small bowl, whisk together lemon zest and juice, olive oil, grainy Dijon, honey, sumac, salt, and pepper, and enjoy! This dressing lasts up to 1 week in the fridge.
