Tomato, Peach & Burrata Salad

Alongside its delightful taste, the Tomato, Peach, and Burrata Salad also packs a healthful punch. Tomatoes provide lycopene, a potent antioxidant linked to heart health, while peaches contribute vitamins A and C – great for your skin and immunity. With creamy burrata in the mix, this salad brings you both taste and nutrition.

Tomato, peach & burrata salad

INGREDIENTS:
Dressing:

  • 1/2 Cup extra-virgin olive oil

  • 1/4 Cup balsamic or champagne vinegar

  • 1 Tbsp. honey

  • 1/2 Shallot, finely chopped

  • 1 Clove garlic, grated

  • 1 Tsp. lemon zest

  • 1/4 Cup chopped fresh basil

  • 1 Tbsp. chopped fresh oregano

  • 1 Tbsp. chopped fresh dill

  • 1 Tbsp. chopped fresh thyme

  • Red pepper flakes

  • A pinch of kosher salt and fresh black pepper

Salad:

  • 1½ - 2 Cups tomatoes*

  • 2-3 Peaches, sliced into wedges

  • 8 Oz. burrata cheese

  • Fresh basil (for garnish)

*I recommend using a mix of cherry tomatoes and large, multi-colored tomatoes for a dynamic flavor profile and an aesthetically pleasing presentation! 

INSTRUCTIONS:

Serves 6

Dressing:

  1. In a glass jar, blend together all the dressing ingredients and whisk until a velvety consistency is achieved. Adjust the flavors by tweaking the chili flakes, salt, and pepper according to your palate's preference.

Salad:

  1. In a generously sized bowl, gently toss the tomatoes and peach wedges with approximately 1/3 of the dressing. Allow the medley to rest for 15 minutes at room temperature or for a more intense infusion, let it marinate for up to 4 hours in the refrigerator.

  2. When ready to serve, break the burrata into rustic pieces and scatter them over the salad. Alternatively, you can choose to keep the burrata whole, allowing it to stand as a captivating centerpiece. Drizzle the remainder of the dressing over the dish.

  3. Sprinkle pumpkin seeds and fresh herbs on the salad for an added crunch and herbal essence. 

  4. Serve this with grilled or toasted bread, or on its own!
