Banana Popsicles

When summer time hits, we all want a yummy ice cream or refreshing popsicle to cool us down. Well, I don’t know about you, but I don’t reserve my frozen delights for summer only! Cut to me staring into my freezer wishing for delicious ice cream at all times of the year! Who is with me!?

I can’t help myself, I love treats, but I always feel sick after and slightly guilty for being so indulgent. But, when I stumbled upon banana popsicles, the answers to my sweet tooth prayers were answered! I immediately tried to make them myself and never could quite get it right. But after about a thousand attempts, I got the recipe and technique down to a science. I usually make enough for 16 portions, but feel free to scale back or add more. Here is my take on banana popsicles – they are gluten-free, dairy-free and paleo approved, and trust me, your whole family will enjoy them!

Vegan Chocolate Coated Banana Pop Recipe 

What you’ll need

Knife

Cutting board

Baking sheet

Parchment paper

2 Small saucepans 

Narrow glass (A 500ml wide mouth mason jar works perfectly) 

Popsicle sticks, cut in half

Ingredients

8 ripe and peeled bananas (cut in half and frozen overnight, or at least 2 hours)

500 g Dairy Free Semi-Sweet Chocolate chips 

3 tbsp raw coconut oil

16 - Popsicle sticks

2 cups of water 

Healthy topping options:

(Yields: 2-4 per topping)

60g raw crushed pistachios 

60g crushed walnuts

40g chopped roasted almonds

40g Granolas

35g coconut flakes

15g bee pollen

40g super seeds mix

Instructions

  1. In one of the small saucepans, warm up 2 cups of water to simmer. You will need this water to keep the chocolate melted in the jar

  2. In the second saucepan melt the chocolate chips at medium heat make sure not to boil. Add in the coconut oil and stir until you reach a smooth uniform texture, leave on low heat while preparing your garnishes

  3. Transfer the chocolate mix into the narrow glass and keep it in the warmed water since the frozen bananas will cool down the mix and might make the process more difficult if the mixture cools down too much

  4. Dip frozen bananas into the chocolate mix, let the excess chocolate drip off then sprinkle your garnish right away so it sticks to the chocolate. You will need to work quickly so the banana stays nice and cold, but it gets easier as you do each stick, one at a time. 

  5. Return the bananas to the freezer to fully set before serving

  6. If you don’t finish them all in one sitting (and trust me, you might!), store the prepared banana treats in an airtight container or Freezer Zipper Bags.
