Soubois

You have to be living under wood if you haven’t heard of Soubois yet. It is without a doubt the city’s newest hotspot and for good reason: it is utterly enchanting! Let me introduce you to my new favorite venue to eat, drink, and dance the night away.
From the creators of bistro Les Enfants Terribles, Flyjin resto-bar (one of my faves!) and café, as well as Velvet Speakeasy, the 6 owners’ latest project opened its doors on Grand Prix weekend. Located in the heart of the city, on Peel and De Maisonneuve, the restaurant serves bistro-style cuisines while the spot transforms into a trendy nightclub as the night progresses.
Chef Guillaume Daly uses only the finest products, focusing on fresh local finds and seasonal items. He developed the delectable menu, which will change on a regular basis to keep you coming back for more.
We started the soiree with raw market vegetables with a chive dip, oysters and some bubbly. We then had the pleasure of tasting their salmon confit, Alaskan king crab, and maple-charred trout, all of which were amazing, especially since I’m a huge fish lover! Next was the grilled Albacore tuna with wild spices and Ceasar romaine, my absolute favorite dish. Each meal was paired with the perfect wine, making for an incredibly luxe dining experience. We ended with their smors chocolate panache that was to die for!
Renowned mixologists Andrew Whibley, Brendan Baxter, and Eric Jensen, carefully concocted the drink menu. I totally fell in love with the Cherry Hill cocktail, a blend of gin, house-made sweet-tea, citrus, and soda. As for the wine selection, a vast 1800 bottles in total, was chosen by master sommelier Elyse Lambert.
When it comes to the design and atmosphere, the only word that comes to mind is perfection. As soon as you head down the stairs, the geometric trees and intricate wooden structures that make up every corner take your breath away. From the light installations, murals by local artist GAWD, top of the line sound system, and logo designed to mimic the wood patterns that surround the bistrot du terroir, one can only marvel in the flawless details.



I can’t wait to head out for a girl’s night at at the sexy underground venue. Soubois is the new destination with a great menu, amazing drinks and Thomas H. (part owner & DJ at Flyjin Friday’s) and guest Dj’s spinning great tracks into the night. There are several bars and private nooks & crannies that make it perfect for hosting parties & events. They even hosted Bono after his performance at the Bell Center . Did I mention they have valet parking? Love the headache free, one-stop shop for fun.
You can look forward to brunches and lunch being served from Tuesday to Sunday starting this August. What happens in the forest stays in the forest! #souboismontreal
