Berries, Avocado & Feta Spring Mix Salad

This summer salad has everything I love about summer. When the sun is out, it's time to get out of my kitchen and enjoy the great outdoors. This salad is full of fresh, bright flavors that are perfect when you're feeling like something light but satisfying.I have to say, this was the salad of the summer in my home- we truly couldn’t get enough of it! Even though the seasons ended now, it’s still an amazing addition to any meal or on it’s own. Try it out! 

PS- Add a grilled protein (tofu, chicken or shrimp), beans (white beans or chickpeas) or a grain (quinoa, wild rice) for a more filling meal. If you plan to prep this salad ahead of time, wait to add the dressing until just before serving!

Berries, Avocado & Feta Spring Mix Salad

INGREDIENTS

Serves 4

SALAD:

  • 5 cups spring mix

  • 1/2 cup blackberries

  • 1/2 cup blueberries

  • 1 avocado, diced

  • 1 ½ cups cucumber, sliced thinly

  • ⅓ cup vegan or regular feta

  • ⅓ cup roasted salted hazelnuts

  • ⅓ cup roasted salted pumpkin seeds

  • Fresh mint  leaves to garnish

  • Salt & Pepper

VINAIGRETTE:

  • ⅓ cup olive oil 

  • 2 tbsp freshly squeezed lime or lemon juice

  • 1 tbsp honey or maple syrup (or other liquid sweetener)

  • 2 tbsp finely chopped fresh mint keep 

  • Salt & Pepper

INSTRUCTIONS:

1. Whisk together all ingredients for vinaigrette. Taste and adjust seasoning as desired. 

2. Assemble salad ingredients and toss in vinaigrette. Enjoy fresh.
