Moroccan Chickpea Dish

This Moroccan Chickpea Dish is a perfect comfort food option for the winter months. I've held onto this recipe for some time now to ensure it's just right before sharing it with you. After numerous trials and errors, I am delighted to say that this dish is not only easy to prepare but also incredibly tasty, making it a definite crowd-pleaser!

Chickpeas are an excellent source of protein, which helps keep you full for longer periods. They also contain high amounts of dietary fiber, which aids in digestion and prevents anemia due to their iron content.

What I love about this dish is its versatility. It can be served as a main or side dish. I recently added some grilled salmon on top for an additional protein boost!

Moroccan Chickpea Dish

INGREDIENTS:

  • 2 tbsp.  Extra-Virgin Olive Oil

  • 1 medium-sized yellow onion 

  • 2 large tomatoes 

  • 1 red bell pepper 

  • 1 can of chickpeas, drained and peeled 

  • 3 tbsp. of coriander 

  • 1 dried Chili pepper 

  • 1 tsp. of harissa 

  • A pinch of saffron 

  • 1/2 cup of water 

  • salt and pepper to taste

  • 2 tbsp. of fresh lemon juice

INSTRUCTIONS:

  1. Heat up the oil in a frying pan over medium heat and let warm for 2 minutes. 

  2. Dice the onion and add it to the pan. Stir them in with the oil and let it cook for 3 minutes, until onions are almost translucent. 

  3. While the onions cook, dice the tomatoes and bell pepper. Add the tomatoes, bell pepper, chickpeas, coriander, dry pepper, saffron, harissa, and 1/2 cup of water to the pan. Season with salt and pepper to taste. 

  4. Slowly mix all the ingredients together until they are well combined. Let the ingredients simmer for 15-20 minutes. 

  5. Finally, top with a sprinkle of fresh coriander and lemon juice et voilà! Enjoy!
