Herbed Cauliflower Rice

This herbed cauliflower rice recipe is the perfect side dish! Not only is it packed with flavor, but it is also super easy to make, low-carb and  includes tons of health benefits. In addition to it being a healthier alternative to rice, you also don’t have to wait the additional 20 or 30 minutes for your rice to cook through.

Cauliflower rice is a versatile and healthy side dish. There are many different ways it can be made but it most definitely needs flavoring from other ingredients. In this version, we stepped up the flavor with butter, lots of fresh herbs, fresh lemon juice, and garlic. For some extra crunch and texture, I love stirring in some roasted sliced almonds. You can leave these out or substitute other nuts.

Herbed Cauliflower Rice

INGREDIENTS

Serves 4

  • 1 medium head cauliflower or 2 bags (340g/bag) of store-bought, frozen cauliflower rice.

  • 1/2 cup sliced toasted almonds

  • 2 tablespoons butter (or ghee, coconut oil or substitute extra virgin olive oil)

  • 2 cloves garlic, minced

  • 1/4 teaspoon fine sea salt

  • Freshly ground black pepper, to taste

  • 1 cup chopped fresh herbs like, dill, cilantro, chives, parsley and/or basil.

  • 1 tablespoon lemon juice or more to taste

Jules’s Tips:

If you wanted to put an Asian twist on this dish feel free to get creative and replace the butter with sesame oil, add soy sauce  and grated ginger




INSTRUCTIONS:

 1. There are two ways to turn cauliflower into rice. You can either use a food processor or a box grater. If using a food processor, cut the head of the cauliflower into medium pieces and remove the core. Working in batches, add the cauliflower to the food processor and pulse until the cauliflower has been broken down into very small rice-like pieces. If using a box grater, cut the cauliflower the same way and grate until the cauliflower resembles rice.

2. As an additional step, it is always a good idea to remove the moisture of the cauliflower by placing it on a clean towel before cooking. 

3. Add butter to a heated skillet. When the butter is melted and begins to bubble, stir in the fresh garlic. Cook the garlic, stirring it around the pan, until fragrant, about 30 seconds.

4. Add the cauliflower rice, salt, and some black pepper. Let it cook, making sure to  continuously stir every so often, until the cauliflower rice begins to turn a light brown colour. 8 to 10 minutes.

5. Remove the skillet off of the heat, and stir in the fresh herbs, lemon juice, and toasted almonds. Taste then adjust with additional salt, pepper or lemon juice.
