Buddha breakfast Bowl

As much as I love an over-the-top sweet breaky, let’s be honest, French toast and pancakes isn’t the greatest way to start the day. I much prefer setting myself up with brain food – like fruits, protein, and other superfoods that get your energy levels up and your blood flowing smoothly (is that even a thing, lol!?).

Waking up to a healthy dose of balanced sweetness and nutrition is my breakfast of champions. My one-bowl Buddha breakfast is my favourite recipe – it combines my chia pudding recipe and my berry smoothie recipe all in one, oh and did I mention the toppings… mmm, the toppings!

Buddha Breakfast Bowl

INSTRUCTIONS

  1. Make the chia pudding (link here). In a medium bowl, combine the milk, chia seeds, honey, vanilla, and salt and stir well to combine. Cover and let sit in the fridge for at least 2 hours or preferably overnight

  2. Make the berry smoothie recipe (link here). Combine the milk, strawberries, raspberries, banana, and vanilla in a blender and blend until completely smooth

  3. To assemble, spoon a little chia pudding into the bottom of your bowl and pour the smoothie to the side of the pudding. Top as desired with yogurt, nut butter, granola, and fruits. Drizzle the whole bowl with honey. Eat!

  4. All toppings are optional- mix and match to your taste!

I use mulberry, it’s a superfood and adds an extra bite of power to the bowl!

Tip:

*A combo of nuts, fruits, and granola makes for the best-tasting Buddha breakfast bowl… but that’s just one gal’s opinion

Here’s the ultimate question:

FRESH OR FROZEN FRUIT?

I prefer using fresh fruit for dishes like salads and desserts or other baked items, but for smoothies, I love using frozen fruit. The frozen fruit adds the same texture and temperature as ice cubes would, but doesn’t water down the smoothie. Simple but genius! If you have tons of fresh fruit on hand, that obviously works great, too, but if it’s the dead of winter, stock your freezer with frozen fruits and you’ll always have the possibility of a healthy smoothie or Buddha bowl!
